David Moret is a micro-négociant based in Beaune, Burgundy. Without family-owned vineyards, he sources grapes from esteemed growers, focusing on small parcels to ensure quality. The 'Sous La Velle' vineyard is a lieu-dit located just below the village of Meursault at an altitude of approximately 200 meters. The soils are composed of clay and gravel, contributing to the wine's minerality. The grapes are handpicked into small boxes to preserve their integrity until arrival at the winery. In the cellar, the wine undergoes fermentation and malolactic fermentation in French oak barrels, with 25% new oak used. It is aged for just over 12 months before being bottled and resting in cellars for approximately six months.
