Founded in 1905 by Eugène-Aimé Salon, Champagne Salon is renowned for producing single-vintage, single-varietal (100% Chardonnay), and single-village (Le Mesnil-sur-Oger, a Grand Cru in the Côte des Blancs) Champagnes. Salon produces only one Champagne, the Cuvée S, and only in exceptional years. The 2007 vintage is one of the rare releases, with approximately 60,000 bottles produced.
